Jericho Fume Blanc
This is not your typical Sauvignon Blanc.
Inspired by wines of the Pouilly-Fumé appellation in France, this is barrel fermented in old French oak and aged on lees for 7 months.
Grapes are grown at high altitude (320-340m) in the Kuitpo vineyard in the Southern Adelaide Hills – ideal terrior for the varietal – allowing slower ripening and giving complexity and elegance. Shallow, well drained soils also confer a full concentration of flavours in the fruit and a mineral acidity crucial for this style of wine.
The style of Fumé Blanc gives the wine elegance and intensity from barrel fermentation; there is spice, complexity and a soft luscious texture whilst the classic floral and tropical fruit varietal characters remain.
Unlike most Sauvignon Blanc, the barrel aging allows this wine to develop over time. Fresh and vibrant while young, but shows potential to age for 4-6 years.
This wine is perfectly suited to fresh flavoured dishes with aromatic herbs, stir-frys and salads. Delicate seafood and poultry dishes.

Jericho Wines is a new and exciting wine brand brought to you by the Jericho family: Neil and Andrew (with 50 years of wine making between them) have crafted the wines, Kim, the graphic artist has designed the labels, Sally and Kaye support the family business and administration.
With over 35 years in the wine industry Neil brings years of winemaking and winery management experience. Neil’s experience includes Swan Hill, Rutherglen, King Valley in Victoria, Taylor Fladgate and Yeatman in Portugal and senior roles with Campbell’s, Brown Brothers, All Saints and Taylors.
Not surprising, Andrew followed in his father’s footsteps, finishing a bachelor of Oenology at the University of Adelaide in 2003. He has been winemaking in the McLaren Vale for the past 10 years and has spent time travelling through Europe and America “researching” wine styles. Most recently in 2012. Andrew conducted a vintage at Grace Vineyards in the Shanzi Province of China.
